Mapo Tofup
- 1 Tbsp Sichuan peppercorns, then grind
- crushed red chiles
- chili oil
- 3 Tbsp minced ginger
- 3 Tbsp minced garlic
- 8 oz ground pork or chicken
- 1-2 Tbsp spicy bean sauce
- 2 Tbsp Xiaoxing wine
- 1 Tbsp
dark soy (or soy + molasses, skip sugar)
- ~1c chicken broth
- 1 pound tofu
- 1 tsp sesame oil
- 1/4 tsp sugar
- 1 scallion, garnish
Saute pepercorns, chiles (if chile oil is not hot enough),
then garlic, then ginger.
Saute meat in this oil
add corn starch, roux style
spicy bean sauce.
tofu cubes
Wine, soy
chicken stock, simmer to thicken
chili oil to taste
