Oatmeal Spice Cookies
- 3/4 cups flour
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 6 cloves, ground
- 1.5 tsp allspice, ground (< 1.5 tsp after grinding)
- 1/2 teaspoon ginger powder (could try fresh... perhaps)
- 1/2 cup butter
- 1 cup brown sugar
- 1 eggs
- 1/2 teaspoon vanilla
- 1.5 cups oatmeal
- 1 cup combo of nuts, raisins, dates, currants as desired
Directions:
- If using currants or raisins, soak them in the egg
- Pre-heat oven to 375.
- Mix flour, soda, salt, and dry spices in a bowl
- Cream butter and sugar.
- Beat in eggs.
- Add flour mixture
- stir in oatmeal
- Stir in any wet spices and nuts or dried fruits.
- Drop by tsp onto lightly greased cookie sheet.
- bake 375 for 10-12 minute.
If not using instant oatmeal, may want to stir it in BEFORE flour
to give it some time to soak up some moisture.
I made a match adapting from this recipe, and it was quite good.

- 1 cup white sugar
- 1 cup brown sugar
- 2 eggs
- 1 teaspoon vanilla
- 3 cups oatmeal
- 1 cup nuts (optional)
Directions:
- Cream butter and sugar.
- Beat in eggs.
- Add spices, flour, soda and salt.
- stir in oatmeal and nuts.
- Drop by tsp onto lightly greased cookie sheet.
- bake 375 for 10-12 minute.
